In the following pictures, just be aware that I doubled this recipe! It’s simple, very flavorful, lean & healthy, it freezes well for future meals and best of all, IT’S EASY!!! Here we go!
Dice the following veggies and mix together.
Add Sesame oil to pan and heat on HIGH. Add veggies and cook down for 5 minutes stirring frequently.
While veggies are cooking, cook your brown rice. I used the boil-n-bag because it was so easy!
Next add your ground chicken (or ground pork- I happen to like the ground pork better but the butcher didn’t have any the day I went shopping!) Boo! But make no mistake, the ground chicken is good too!
Cook chicken and veggies on HIGH stirring constantly to cook evenly through for 5-7 minutes. Drain any remaining liquid from the pan. Add rice and mix together evenly.
Next, add soy sauce and your favorite Stir-fry Sauce. If you would like it spice add a bit of Sriracha sauce. Mix well and let simmer for 20 minutes.
Serve on lettuce cups and top with sesame seeds! Wa-la! Dinner is served!
